Zucchini Casserole

I tried a new recipe tonight.  I got it from a fundraiser cookbook that was written in 1984.  I should have taken a picture when it first came out, but it's too late now.  It was a hit.

 Zucchini Casserole

6 to 8 medium zucchini                      1 pkg. seasoned croutons
5 medium carrots                               1 can cream of chicken soup
1 small onion                                     1 can cream of mushroom soup
1 stick butter                                     1 8oz sour cream

     Boil zucchini until done;  drain.  Melt margarine in large pan.  Saute carrots and onion in butter.  mix soups and sour cream into carrot and onion mixture.  Add zucchini, then croutons.  Put in baking dish.  Bake 30 minutes at 350 degrees.
